Cafeteria patrons may take paleo challenge

Healthy food can be tasty, too.

The Sparkman Cafeteria and the Von Braun III Cafeteria offer a new healthy choice, paleo-inspired meal plan. “A lot of people refer to it as the caveman’s diet,” Chris Isbill, business manager for the Post Restaurant Fund, said laughing.

“The basis of paleo is a healthier choice option,” he explained. “We use all natural oils. Examples would be coconut oil, coconut milk, olive oil. There’s no dairy products used with paleo. The exception is clarified butter. All of the milk fats are actually cooked out of the butter to create a healthier butter option.”

Some of the paleo menu items include Easter lamb, garlic sautéed mushrooms and an apple fennel salad. The meals are served with one paleo protein, two paleo vegetable servings and either a bottled water or unsweetened tea. The price is $7. The paleo meal is available every weekday at the Sparkman and Von Braun III cafeterias.

“In May we will be doing a 30-day paleo challenge,” Isbill said. “You pre-buy your meals. You’ll get 21 meals for $140.”

Registration began the second week of April and will conclude Thursday.

Participants in the paleo challenge at the two cafeterias will be eligible for a drawing for a year’s worth of free meals from the entrée line. The limit would be one free meal per day; and drinks will not be included.

During the 30-day paleo challenge, the pre-bought meals must be picked up by 12:40 p.m. each day.

The Sparkman Cafeteria, at building 5302 in the Sparkman Center, can be reached at 876-8741. It serves breakfast from 6:30-10 a.m. and lunch from 10:30 a.m. to 1 p.m. Monday through Friday. The food court is open Monday through Thursday from 10:30 a.m. to 1 p.m., closed Friday. Sparkman Cafeteria also has a catering service available; call Monday through Friday from 6:30 a.m. to 4:30 p.m. The cafeteria has a full food bar with a wide variety of items, a grill and salad bar.

The Von Braun III Cafeteria, building 5224, is only accessible to those who have security badges and access into the Von Braun Complex. It’s open from 6:30 a.m. to 1 p.m. Breakfast is served daily from 6:30-10 a.m. and includes items such as eggs, bacon, sausage, grits, potatoes, biscuits and gravy, fresh fruit, yogurt, pastries and cold cereal. Lunch is served daily from 10 a.m. to 1 p.m. and includes daily entrees, sandwiches, hot grill, gyros, pizza and calzones, taco bar, potato bar, salad bar, soup bar and dessert.
